Special Reserve Chardonnay

Chardonnay Special Reserve, 2021 Vintage, holds the quality category of Protected Geographical Indication (PGI), Thracian Valley region. It is vinified from Vinex Slavyantsi’s own vineyards, located in the lands of Kosten village, Sungurlare region.

The vineyards are situated on a complex soil profile of grey forest and limestone soils. The climate is moderate continental, characterized by mild, humid winters and a high accumulated temperature throughout the year. The average planting density is 4,400 vines per hectare. This is a terroir wine with a controlled yield of 8,000–9,000 kg of grapes per hectare.

 The grape harvest takes place from early to mid-September, once the grapes have reached technological maturity.

The vinification process includes:  :

  • Destemming (separating the stems from the berries), crushing, and pressing of the grapes.
  • Destemming (Separation of the stems from the berries)Crushing and pressing of the grapes
  • The resulting grape must is fermented in a combination of new and old French oak barrels at a controlled temperature of 16–18°C for two weeks, using selected yeast strains.
  • Aging of the wine Minimum of 6 months under continuous physico-chemical and sensory control, with periodic stirring of the fermentation lees. (Battonage) to achieve a complex flavor profile.
  • Stabilization of the wine against protein and tartrate instability, followed by sterile bottling.
  • Bottle aging followed by tasting to determine the optimal moment for market release.

 Tasting Profile

Color: Delicate, pale gold with beautiful brilliance and vibrant highlights.

Bouquet:Complex, with nuances of ripe citrus and pineapple, beautifully balanced with subtle floral accents, mineral notes, and distinct vanilla.

Palate:Elegant and smooth, with good freshness and a juicy, aromatic finish.

This wine possesses the potential to develop in the bottle for up to 5 years.

Food Pairing:Pasta and lasagna with meat sauces, curry dishes, chicken with creamy sauces, light red meats with sweet and sour sauces, and soft white cheeses.

Recommended serving temperature: 10–12°C.
