Special Reserve Syrah

Special Reserve Syrah 2022 is a quality wine with the Protected Geographical Indication (PGI) Thracian Lowlands. It is vinified from Vinex Slavyantsi’s own vineyards, located in the village of Antimovo, Karnobat region.

The vineyards are situated on cinnamon and gray forest soils. The climate is temperate continental, characterized by mild, humid winters and high cumulative annual temperatures. The average planting density is 3,330 vines per hectare. This is a terroir wine, with a controlled yield of 7,000–8,000 kg per hectare.

 The grapes are harvested in late September, once they have reached optimal technological maturity.

The vinification process includes:  :

  • Destemming (separating the stems from the berries), crushing, and pressing of the grapes.
  • Destemming (Separation of the stems from the berries) and Crushing and pressing of the grapes
  • The resulting grape must is fermented using selected yeasts at a controlled temperature of 25–27°C for a period of two weeks.
  • Separation of the wine from the solids and inoculation with a suitable strain of lactic acid bacteria.
  • The wine is aged for 12 months in a combination of new and old French oak barrels, under continuous physicochemical and organoleptic (tasting) control.
  • Stabilization of the wine against protein and tartrate instability, followed by sterile bottling.
  • Bottle aging for a minimum of 6 months, followed by a final tasting to determine the optimal time for its market release.

 

Tasting Profile The wine boasts a beautiful ruby color with soft violet hues. The aroma is dominated by ripe red and black fruits, including blueberry and blackcurrant. Barrel aging has imparted prominent notes of dark chocolate, cocoa, and coffee, which complement the varietal floral notes of violets and soft mint. Mature in oak barrels, the wine possesses soft and juicy tannins, accented sweetness, and a long-lingering finish. This wine has an aging potential of up to 10 years.

The recommended serving temperature is 18–20°C.

Perfectly paired with spicy and soft cheeses, red meat steaks, and herb-crusted lamb chops.
