Description
Special Reserve Merlot 2021 is a quality wine with the Protected Geographical Indication ((PGI) status.) from the Thracian Lowlands region. It is vinified from Vinex Slavyantsi’s own vineyards, located in the village of Antimovo, Karnobat region.
The vineyards are situated on cinnamon and gray forest soils. The climate is temperate continental, characterized by mild, humid winters, high cumulative annual temperatures, and moderate rainfall during the summer months.
The average planting density is 3,330 vines per hectare. This is a terroir-driven wine with a controlled yield of 7,000–8,000 kg of grapes per hectare.
The harvest takes place in late September and early October, once the grapes have reached their optimal technological maturity.
The vinification process includes: :
- Destemming (separating the stems from the berries), crushing, and pressing of the grapes.

- The resulting grape must is fermented with selected yeasts designed for a more extractive profile, at a controlled temperature of 25–27°C for a period of two weeks.
- Separation of the wine from the solids (Seeds and skins) and inoculation with a suitable strain of lactic acid bacteria.
- The wine is aged for 12 months in a combination of new and seasoned French oak barrels, under continuous physico-chemical and organoleptic (tasting) control.
- Stabilization of the wine against protein and tartrate instability, followed by sterile bottling.
- Bottle aging for a minimum of 6 months, followed by a final tasting to determine the optimal time for its market release.

Bouquet:Intense and complex, with notes of red and black cherry combined with soft smoke, sweet spices, subtle vanilla, and caramel.
Palate:Full-bodied, with a sense of ripe red fruit and a distinct, pleasant juiciness, leading to a smooth, soft, and fruity finish.
The wine has an aging potential of up to 8 years in the bottle.
The recommended serving temperature is 18-20°C. This wine pairs excellently with roasted chicken or duck. It is also highly recommended with cheese platters or pasta topped with a rich cheese sauce.
