It is vinified from Vinex Slavyantsi\u2019s own vineyards, located in the village of Antimovo, Karnobat region.\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00a0\u00a0\u00a0\u00a0<\/em><\/p>\n<p><em>The vineyards are situated on cinnamon forest soils in a moderate continental climate, with an average planting density of 3,330 vines per hectare. This is a terroir wine, with a controlled yield of 7,000\u20138,000 kg of grapes per hectare. <\/em><\/p>\n<p><em>\u00a0The harvest takes place in late September, once the grapes have reached their optimal technological maturity.<\/em><\/p>\n<p><em><u>The vinification process includes:<\/u><\/em><em> \u00a0: <\/em><\/p>\n<ul>\n<li><em>Reception and quality assessment of the raw material<\/em><\/li>\n<li><em>Destemming <\/em><em>(<\/em><em>Separation of the stems from the berries<\/em><em>)<\/em><em> and Crushing and pressing of the grapes<\/em><\/li>\n<li><em>The resulting grape must is fermented using selected yeasts at a controlled temperature of 25\u201327\u00b0C for a period of two weeks.<\/em><\/li>\n<li><em>Separation of the wine from the solids and inoculation with a suitable strain of lactic acid bacteria.<\/em><\/li>\n<li><em>The wine is aged for 12 months in a combination of new and old French oak barrels, under continuous physicochemical and organoleptic (tasting) control. <\/em><\/li>\n<li><em>Stabilization of the wine against protein and tartrate instability, followed by sterile bottling.<\/em><\/li>\n<li><em>Bottle aging for a minimum of 6 months, followed by a final tasting to determine the optimal time for its market release. <\/em><\/li>\n<\/ul>\n<p><em>\u00a0<u>Tasting Profile<\/u> The wine boasts an intense, deep red color with soft ruby highlights. The bouquet is dominated by ripe black forest fruits and mild piquant spices. As a result of the oak aging, distinctive notes of dark chocolate, hazelnut, and coffee emerge, blending seamlessly with the varietal aromas and hints of dried red pepper.
